There are a few key items that can be game changers in the hectic but ever-exciting world of Hampton’s weekend entertaining. “Pizza Bianca”, a 6-foot long bread when it’s delivered to the market by Sullivan’s Bakery, is neatly cut into approximately foot long pieces by Village Prime Meat Shoppe and then sold to eagerly awaiting weekend hosts. This light, airy, hand-formed flatbread is porous and full of air pockets making it uniquely both soft and crusty at the same time. Jim Lahey, the baker of this delicious bread, found out early the miracle of baking with olive oil.

Even so, under the heading of “you can never get enough of a good thing”, I always add more in a generous way when I top and heat it before serving. This stunning and attention-grabbing bread is the perfect foundation for almost any type of topping.

I quickly rough chop zucchini and basil, then fold together with feta adding fresh basil or goat cheese and thyme and generously top it in a rustic way. This bread can take nearly anything as topping options and might include: roughly chopped olives, a homemade or farmstand pesto and fresh mozzarella, summer truffles, shaved pecorino and truffle oil, or grilled shrimp with chopped heirloom tomatoes or caramelized onions and roasted

Even easier, buy good quality prosciutto-heat the bread, layer the prosciutto on after it comes out of the oven, drizzle olive oil, cut and serve! Serve larger squares with an arugula salad as lunch.
